About a year ago, back when I first gave calorie counting a try, my husband and I had gone to Uno Pizzaria and Grill with a few friends for dinner. Sadly, I knew that there was just no way my broken pancreas was going to be able to handle even their smallest, individual-sized pizza, but I went against my better judgment anyway. I decided I’d look for a lower calorie, more low-carb-friendly option and eventually settled on their Walnut, Blueberry & Goat Cheese entrée salad. I was expecting a bland pile of greens (a la most pizza places everywhere) but instead, my taste buds were greeted with a delightful surprise!
Yes, it kind of was a pile of greens, but it was actually a really good pile of greens, especially for being such a simple salad! So the other day when I found myself with a hankering for that particular salad but no accompanying inclination to spend $12 (plus tax and tip) to have it served to me, I figured I would just make it at home! My version is a little different, but IMO, just as enjoyable. I subbed walnuts for pecans (you’ll see why in a sec), and instead of a blueberry-pomegranate dressing I dressed my greens with plain and simple EVOO, cutting some of the unnecessary sugar from the dish. To make this simple salad yourself, you will need:
- Spinach leaves (preferably organic)
- Fresh blueberries
- Goat Cheese
- Honey roasted pecan pieces
Carb-counting is something I have to do to determine the amount of insulin I need for a meal; if you find yourself in the same boat, or if you’re looking to reduce the carbs in your life (and there are oh so many), then you’ll want to know that 1/4 cup of blueberries is 11g of carb! Blueberries are super good for you. Did you know they have the highest antioxidant capacity of all fresh fruit?
These delicious pecan pieces are what give this salad a tiny kick of sweet. You could certainly make your own honey roasted pecans, but when you’re in a hurry (or allergic to walnuts?) these work great! Use sparingly if you’re counting carbs, however, as 1/4 cup of these sweet nuts is about 25g carb.
- 2 cups washed organic spinach
- 1/4 cup fresh blueberries
- 4 Tbsp honey roasted pecan pieces
- Sprinkled goat cheese
- Extra Virgin Olive Oil
Combine your salad ingredients in a bowl and drizzle with extra virgin olive oil!
