Good Monday, dear readers! I’m sure you’ve been wondering where I’ve been, since the last time I posted was way back when I quit my job in early May! The Mr. and I have since relocated back to home sweet home in Phoenix, Arizona, which is where I’m originally from.
I’ll dearly miss Boston, but as I mentioned before a new chapter in our lives is starting, and it’s time to move on! I’m still not quite on my feet with the unpacking (I know, I know–What have I been doing for the last month?), so my blog pal Aliesha at Feathers In Our Nest graciously agreed to help me out by guest posting! This is the first guest post EVER at Essentially Eclectic, so I hope you enjoy this historic occasion! Take it away, Aliesha!
First of all, I just wanted to thank Gabby for letting me guest post on her blog today! I love reading Essentially Eclectic, and it’s an honor to be with you all today.
I wanted to share with you an incredibly easy recipe for a sweet summer treat: ice cream cake!
This recipe takes almost no time at all, yet it looks great and tastes even better.
Easiest Ever Ice Cream Cake
- 12 ice cream sandwiches
- 1 tub of frozen whipped topping
- Toppings of choice (see below for ideas)
Line up three ice cream sandwiches on a plate so they are touching. Top with remaining nine ice cream sandwiches to form a cube.
Spread thawed whipped topping over the top and sides of the ice cream sandwiches.
Return to freezer for a bit to make cutting easier (optional, but recommended).
Top as desired! I used blueberries, but other great ideas include strawberries, chocolate syrup, caramel sauce, crushed Oreos, toasted marshmallows, chocolate chips, M&M’s, birthday candles, sparklers… really you can use almost anything!
So easy, right?
For cutting the cake, I recommend using a very sharp serrated knife and using a gentle “sawing” motion instead of cutting straight down.
I saw some other varieties of ice cream sandwiches at the store when I was buying these (Oreo, Reese’s, etc.), so those would be fun to try as well!
Hope you enjoy this delicious summer recipe! Stay cool this summer!
