Good Monday, dear readers! I’m sure you’ve been wondering where I’ve been, since the last time I posted was way back when I quit my job in early May! The Mr. and I have since relocated back to home sweet home in Phoenix, Arizona, which is where I’m originally from.
I’ll dearly miss Boston, but as I mentioned before a new chapter in our lives is starting, and it’s time to move on! I’m still not quite on my feet with the unpacking (I know, I know–What have I been doing for the last month?), so my blog pal Aliesha at Feathers In Our Nest graciously agreed to help me out by guest posting! First of all, I just wanted to thank Gabby for letting me guest post on her blog today! I love reading Essentially Eclectic, and it’s an honor to be with you all today.
I wanted to share with you an incredibly easy recipe for a sweet summer treat: ice cream cake!
This recipe takes almost no time at all, yet it looks great and tastes even better.
Easiest Ever Ice Cream Cake
- 12 ice cream sandwiches
- 1 tub of frozen whipped topping
- Toppings of choice (see below for ideas)
Line up three ice cream sandwiches on a plate so they are touching. Top with remaining nine ice cream sandwiches to form a cube.
Spread thawed whipped topping over the top and sides of the ice cream sandwiches.
Return to freezer for a bit to make cutting easier (optional, but recommended).
Top as desired! I used blueberries, but other great ideas include strawberries, chocolate syrup, caramel sauce, crushed Oreos, toasted marshmallows, chocolate chips, M&M’s, birthday candles, sparklers… really you can use almost anything!
So easy, right?
For cutting the cake, I recommend using a very sharp serrated knife and using a gentle “sawing” motion instead of cutting straight down.
I saw some other varieties of ice cream sandwiches at the store when I was buying these (Oreo, Reese’s, etc.), so those would be fun to try as well!
