Greek Style Pasta with Tomatoes, Black Olives, Feta Cheese and Capers

My apartment and I, we kind of have a love-hate relationship. It’s clean, it’s in a fantastic neighborhood, it’s close to my work and close to The Mr.’s school {in fact, any closer and we’d be living on campus}. But it’s old. And there are florescent. lights. everywhere. And our particular unit faces the building next to us, meaning we don’t get a lot of direct sunlight flooding through our windows during the day {which, if I didn’t care about photography, would be lovely}. It’s not a photographer’s dream by any stretch of the imagination–I can basically only take photos from 10am to 2pm on the weekends.

So, long story short, this #InstaDinner was born out of my realization that Instagram filters mask the ugly flash or florescent lights that always manage to find their way into my photography on natural-light-less weeknights. With #InstaDinner, I can share with you my food moments even when they fall outside of that magic 10-to-2 window!! Exciting, yes?? :) Here is my first #InstaDinner food moment:

Greek pasta salad with linguini, olives, salami, feta, cherry tomato and onion
My aunt is a chef, so when she throws a meal together, it tends to really come together nicely. This recipe is something that she threw together after eating a tasty-but-lacking bowl of Spaghetti Aglio e Olio at a restaurant in Israel one summer. What is great about this dish is that it is easy to make a lot {think pot luck} or just a little {think you have to make dinner just for your onsies and you don’t want mounds of leftovers}, and it’s pretty darn tasty!

THE RECIPE

  • Angel hair pasta {whole wheat gives you health points!}
  • Olive Oil
  • Onion, chopped
  • Tomato {I used grape tomatoes, halved}
  • Black Olives, chopped
  • Feta Cheese
  • Capers {optional, but recommended}
  • Pine nuts {optional}
  • Meat {I’ve used bacon, chicken, salami-type meats, etc.–also optional}

In a saucepan, bring a good amount of olive oil and chopped onion to a low boil until the onion looks soft and is clear-looking. While you’re doing this, cook your pasta al dente {I used linguine in the photo, since that was what I had on hand} and dump the water. When your onion is soft, add your tomatoes and black olives to the olive oil and heat until the tomatoes are soft but not falling apart. In a bowl, pour your hot oil mixture over the pasta. Immediately thereafter, break up a brick of feta cheese into the the pasta and stir. The heat from the oil and pasta will melt the cheese. Add capers, pine nuts, and the meat of your choice and mix well. Add sea/kosher salt and pepper to taste, if necessary. And viola! You’re done!

Since this dish can be made to serve as many as you like, the exact measurements of each ingredient will vary and will also very according to taste. To make 2-4 servings, I used about 3/4 cup of olive oil, 1/4 cup chopped olives, 3/4 cup halved grape tomatoes, 1/2 cup chopped onion {depending on the oomph of the onion}, a small brick of feta cheese, 1/2 of a package of pasta, and just enough capers, pine nuts, and meat to keep things proportional.
